Also, my French teacher is stupidly gorgeous and I will be in a small room with her, speaking French, some of which I have no way of preparing for and therefore have to think in French on my feet, when I can barely string two English words together to say to her.

Best thing I ever learny (this coming as someone who never finished her degree in French) don't say "Ummm" or "Err". It sounds awful, if you get stuck go "Buhhhh" or "Euhhh" in a French way. That way you don't sound like you're floundering hopelessly but thinking of the correct French word. It does help.
